Robert Carrier's enthusiasm for Spanish cookery is infectious & the book is liberally scattered with mouth watering photographs. Carrier clearly has a deep respect not only for traditional Spanish cuisine but also the new wave of chefs who combine traditional values with a modern approach such as Juan Mari Arzak the celebrated San Sebastian restaurater This book is a godsend to aficionados of Spanish cuisine given the paucity of English language cookery books currently available. The one drawback is that some of the recipes are somewhat inaccuratein places & a measure of experience is required to interpret the instructions correctly.
