I have just received this book for the ever efficient Amazon delivery service. The recipes are simple, the ingredients easily obtainable & most of the recipes can be made as weekday meals - when you have neither energy nor time to start cooking up a feast. I bought this book not because I am on a diet - but because I want to eat healthily & this book can certainly help. My one complaint is the layout - very old, with pencil drawing & cheap paper. However, if you ignore this, it's a great resource. I would also recommend Wills' latest top 200 low fat meals & Rose Elliott's "Fast Fresh & Fabulous" cookbook.

Judith Wills' Virtually Vegetarian is a wonderful cook book that gives lots of advice for a healthy diet & lifestyle & is packed with easy to follow low-fat recipes . All the recipes are imaginative & delicious using a limited amount of ingredients. So not only have we managed to lose weight, but our food bill has gone down as well. The recipes are simple & quick to prepare & suitable for family meals as well as supper with friends.
